Cheese Medallions

A kind of home made mini cheddar!

8oz mature cheddar, grated. (definitely gives a strong taste so you can probably get away with a milder cheddar if that’s more to your taste).

1/2 cup soft butter

1 cup plain flour

Sprinkle of garlic powder (optional)

Sesame seeds (optional)

Mix all ingredients except sesame seeds together into dough

Split dough in half and role each into a long log about 1 inch diameter, 12 inches long. Roll log in sesame seeds if desired.

Chill for about 4 hours or overnight

Slice into rounds about 1/4 inch.

Bake at 180C 10+ minutes till golden brown. Cool on a wire rack.

You could probably add whatever flavourings you want to it, like herbs, or worcester sauce, or chilli powder. Maybe fork some holes in like mini cheddars!

And you can just cut the number off the log you will need.
